I've been on a baking kick lately..... if I am invited almost ANYWHERE, I want to bring some kind of sheet cake-ish offering. With this in mind, I thought I would post a few of my latest offerings.
I don't know what I am thinking when I buy the HUGE bag of bananas from C*stco. I have been reassured that when Tate is here, I will never have over ripe left over bananas. Until that special time, here is a way to use the left over bananas I have on hand.
BANANA CAKE WITH SOUR CREAM FROSTING
1 /2 cup butter
1 1 /3 cup sugar
2 cups flour
1 tsp baking soda
1 /2 tsp salt
2 beaten eggs
1 tsp vanilla
3-4 ripe mashed bananas
3 /4 cup buttermilk
1 4 cup regular milk
In large bowl, cream together butter and sugar. Add beaten eggs and vanilla. In another bowl shift dry ingredients together. Alternate adding dry and wet ingredients into butter/ sugar mixture. Beat until smooth then add bananas last. Place in a greased and floured 9 x 13 pan. Bake at 350 degrees for 45-50 minutes. Cool and frost with sour cream frosting.
SOUR CREAM FROSTING
I do not have a recipe for sour cream frosting other than I take some (1 /2 square) butter and a large dollop (guessing 1 cup) sour cream. I put some powdered sugar and 1 tsp vanilla and beat adding powdered sugar until it is a good consistency. Spread on cake and refrigerate until you enjoy.

Mmmm. That looks divine. Want to come visit and bring me some? I don't buy bananas anymore cause my kids don't eat them fast enough. Maybe I should buy them and make this recipe.

Mmmm...that looks divine! Have fun baking up a storm with the girlies next week! They rock at backing and are amazing at how much they do to help out. Not long now...yay!!!

Looks delish - is there a way to reduce the fat and make it more healthy without sacrificing the taste? Has anyone tried substituting applesaue or something similar for the butter? Does it really work without affecting the taste?
Oh gee, I love to cook but I'm not so good a baking. I do very poorly on the measurement thing... However, I'm thinking banana. Frosting. Lots of frosting.
